Energy balls are a favorite at our house! They are ideal in so many situations. You want something quick and light before you work out? It's 3pm and you're hungry but dinner is in two hours and you don't want another diet coke? Need a healthy treat before bed? Perfect! We love these. And they are a cinch to make!
Energy Balls:
1 cup oats
⅔ cup unsweetened coconut flakes
½ cup peanut butter
½ cup ground flaxseed
½ cup dark chocolate chips or cacao nibs
⅓ cup agave or honey (I usually add a bit more to make it stickier)
1 tablespoon chia seeds
1 teaspoon vanilla
1 scoop chocolate protein powder (optional)
Sprinkle of salt
Mix all ingredients in a bowl.
Cover with plastic wrap and set in fridge for 30 minutes.
Roll into small balls and place in tupperware.
Enjoy all week!
